Ingredients

  • 3 Small heads of broccoli
  • 1 box of chicken broth
  • 3 cloves of elephant garlic
  • 1 white onion
  • 1 package of bacon
  • 1 cup of heavy whipping cream
  • 3 and 1/2 cups of cheddar cheese
  • 1 tbsp butter

Instructions

  1. Saute minced onions and garlic in butter until tender.
  2. Bake bacon in oven on 375 until crispy or desired texture is reached.
  3. Place cut up broccoli florets in a pot with chicken broth, softened garlic and onion, and heavy whipping cream.
  4. Bring to a boil and then let simmer on low for 15-20 minutes until broccoli is tender.
  5. Using a serving spoon with slots, take three to four large spoon fulls of broccoli and blend until pureed. Place puree back into the pot.
  6. Add cheddar cheese 1 cup at a time allowing cheese to melt slowly and fully, stirring constantly.
  7. Chop up bacon and place into soup. Enjoy.
